β Ingredients (Makes 8β10 rounds, depending on size)
Nuts & Seeds
1 cup whole almonds
Β½ cup pumpkin seeds
ΒΌ cup sunflower seeds
2 tbsp sesame seeds
Optional: 2 tbsp chopped pistachios (Mediterranean flavor boost)
Binding Syrup
Choose one:
Honey (Mediterranean classic) β β
cup
OR
Sugar-free syrup (maple-style or keto syrup) β β cup
Also add:
1 tbsp extra-virgin olive oil or coconut oil
ΒΌ tsp cinnamon (optional)
Pinch of sea salt
π¨βπ³ Instructions
1. Lightly Toast the Nuts & Seeds
Heat a pan on medium.
Add almonds, pumpkin seeds, sunflower seeds, and sesame seeds.
Toast 3β5 minutes, stirring frequently until fragrant.
Remove from heat.
2. Make the Binding Syrup
In a small saucepan, heat:
honey/sugar-free syrup + olive oil + cinnamon + salt.
Simmer 2β3 minutes, stirring until it thickens slightly.
3. Combine
Add the toasted nuts/seeds into the syrup.
Stir quickly to coat everything evenly.
4. Shape Into Rounds
Option A β Cookie Cutter Method (as in your picture)
Place a metal cookie cutter on parchment.
Spoon mixture inside and press firmly.
Lift cutter and repeat.
Option B β Hand Forming
Scoop warm mixture
Compress tightly into flat round discs.
Tip: Wet fingers with cold water to prevent sticking.
5. Cool & Set
Let the rounds sit at room temperature 30β40 minutes
OR
Refrigerate 10β15 minutes for faster setting.
They become perfectly crispy once cooled.
