Ingredients
- 1½ lbs boneless, skinless chicken breasts, cut into bite-sized pieces
- 1½ lbs Yukon Gold potatoes, cut into small cubes
- 6 slices bacon, cooked and crumbled
- 1½ cups shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ cup chicken broth
- 3 green onions, sliced
- 2 tablespoons fresh parsley, chopped
Optional
- ¼ teaspoon red pepper flakes
- ½ cup sour cream for serving
- 1 sliced jalapeño for extra heat
Instructions
1. Cook the Bacon
Heat a large oven-safe skillet over medium heat. Cook the bacon until crispy.
Transfer it to a paper towel-lined plate and crumble once cool. Leave about 1 tablespoon of bacon drippings in the skillet.
2. Cook the Potatoes
Add olive oil and butter to the skillet.
Add the cubed potatoes and season with paprika, garlic powder, onion powder, Italian seasoning, salt, and black pepper.
Cook for 8–10 minutes, stirring occasionally, until the potatoes begin to brown.
3. Add the Chicken
Add the bite-sized chicken pieces to the skillet.
Cook for 6–8 minutes, stirring occasionally, until the chicken is golden on the outside.
Add the minced garlic and cook for another 30 seconds.
4. Add Chicken Broth
Pour in the chicken broth and stir well, scraping up any flavorful browned bits from the bottom of the skillet.
Cover and cook for 5–7 minutes, or until the potatoes are fork-tender and the chicken is fully cooked.
The chicken should reach an internal temperature of 165°F (74°C).
5. Add the Bacon & Cheese
Stir half of the cooked bacon into the skillet.
Sprinkle cheddar and mozzarella cheese evenly over the chicken and potatoes.
Top with the remaining bacon.
6. Melt the Cheese
If your skillet is oven-safe, place it under a preheated broiler for 1–2 minutes, just until the cheese is melted and bubbly.
Alternatively, cover the skillet with a lid for 2–3 minutes until the cheese melts.
Watch carefully if broiling.
7. Garnish & Serve
Remove from heat and sprinkle with sliced green onions and fresh parsley.
Serve immediately with a dollop of sour cream if desired.
Tips for the Best Skillet
- Cut potatoes into small, evenly sized cubes so they cook quickly.
- Yukon Gold potatoes have a creamy texture, while russet potatoes give a slightly crispier result.
- Don’t overcrowd the skillet when browning the chicken.
- Freshly shredded cheese melts more smoothly.
- Add jalapeños or red pepper flakes if you prefer a spicy version.
- Let the skillet rest for a couple of minutes before serving.
Frequently Asked Questions
Q: Can I use chicken thighs instead of chicken breasts?
Yes. Boneless, skinless chicken thighs are an excellent substitute and add extra juiciness.
Q: Can I use leftover cooked chicken?
Yes. Add the cooked chicken near the end, just long enough to heat it through, so it doesn’t become dry.
Q: What potatoes work best?
Yukon Gold and russet potatoes both work well. Yukon Gold gives a creamy interior, while russets can become crispier.
Q: Can I add vegetables?
Absolutely. Bell peppers, broccoli, mushrooms, spinach, or corn make great additions.
Q: Can I make this recipe spicy?
Yes. Add jalapeños, cayenne pepper, hot sauce, or red pepper flakes.
Q: How do I know when the chicken is done?
Use a food thermometer. The thickest piece should reach 165°F (74°C).
Q: How should I store leftovers?
Store leftovers in an airtight container in the refrigerator for up to 3–4 days.
Q: How should I reheat it?
Reheat gently in a skillet over medium-low heat or in the oven until hot. Add a small splash of broth if the potatoes seem dry.
