Ingredients

For the Shrimp

  • 1 lb (450 g) large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon paprika
  • ½ teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh lemon juice

For the Parmesan Rice

  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tablespoons unsalted butter
  • ½ small onion, finely diced
  • 2 cloves garlic, minced
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ cup freshly grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Optional Garnishes

  • Extra grated Parmesan cheese
  • Fresh parsley
  • Lemon wedges
  • Crushed red pepper flakes

Instructions

1. Cook the Rice

In a medium saucepan, melt the butter over medium heat.

Add the onion and cook for 2–3 minutes until softened.

Stir in the garlic and cook for 30 seconds until fragrant.

Add the rice, garlic powder, and onion powder, stirring for 1 minute.

Pour in the chicken broth and bring to a boil.

Reduce the heat to low, cover, and simmer for 18–20 minutes, or until the rice is tender and the liquid has been absorbed.

Remove from the heat and let the rice rest for 5 minutes. Fluff with a fork, then stir in the Parmesan cheese and parsley.

2. Season the Shrimp

Pat the shrimp dry with paper towels.

Season with paprika, Italian seasoning, salt, and black pepper.

3. Cook the Shrimp

Heat the olive oil and butter in a large skillet over medium-high heat.

Add the shrimp in a single layer and cook for 1–2 minutes per side, or until pink and opaque.

Add the minced garlic during the last 30 seconds of cooking.

Drizzle with lemon juice and toss to coat.

4. Assemble

Divide the Parmesan rice among serving plates.

Top with the garlic butter shrimp.

Spoon the remaining garlic butter sauce from the skillet over the shrimp and rice.

Garnish with extra Parmesan cheese, fresh parsley, lemon wedges, and red pepper flakes if desired.

Tips

  • Don’t overcook the shrimp—they become rubbery very quickly.
  • Freshly grated Parmesan melts much better than pre-shredded cheese.
  • Use chicken broth instead of water for richer, deeper flavor.
  • Add spinach, peas, asparagus, or broccoli for extra vegetables.
  • Finish with a squeeze of fresh lemon juice for a bright, fresh flavor.
