Chicken Rice Casserole

Ingredients (Serves 6)
- 2 cups cooked chicken, shredded or diced
- 1 cup uncooked long-grain white rice
- 2 cups chicken broth
- 1 cup milk
- 1 can (10.5 oz / 300 g) cream of chicken soup
- 1 cup shredded cheddar cheese
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup frozen peas and carrots (optional)
- 2 tablespoons butter
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- ½ teaspoon black pepper
- ½ teaspoon salt (adjust to taste)
- 2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×13-inch baking dish.
- In a skillet, melt the butter over medium heat. Cook the onion for 3–4 minutes until softened, then stir in the garlic and cook for 30 seconds.
- In a large bowl, combine:
- Uncooked rice
- Chicken broth
- Milk
- Cream of chicken soup
- Cooked chicken
- Onion and garlic mixture
- Thyme
- Paprika
- Salt and pepper
- Peas and carrots (if using)
- Half of the shredded cheese
- Pour the mixture into the prepared baking dish and spread evenly.
- Cover tightly with aluminum foil.
- Bake for 50–60 minutes, or until the rice is tender and most of the liquid has been absorbed.
- Remove the foil, sprinkle the remaining cheese over the top, and bake uncovered for 10–15 minutes, until the cheese is melted and bubbly.
- Let the casserole rest for 5–10 minutes before serving.
- Garnish with fresh parsley if desired.
Tips
- Use rotisserie chicken for a quick meal.
- Brown rice can be used, but it usually requires more liquid and a longer baking time.
- Add sliced mushrooms, broccoli, or spinach for extra vegetables.
- For a crunchy topping, sprinkle buttered breadcrumbs or crushed crackers over the cheese during the last 10 minutes of baking.
Storage
- Refrigerator: Store in an airtight container for up to 4 days.
- Freezer: Freeze for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat: Warm in a 350°F (175°C) oven for 20–25 minutes, or microwave individual portions until heated through.
