Chicken Rice Casserole

Chicken Rice Casserole

Ingredients (Serves 6)

  • 2 cups cooked chicken, shredded or diced
  • 1 cup uncooked long-grain white rice
  • 2 cups chicken broth
  • 1 cup milk
  • 1 can (10.5 oz / 300 g) cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots (optional)
  • 2 tablespoons butter
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt (adjust to taste)
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13-inch baking dish.
  3. In a skillet, melt the butter over medium heat. Cook the onion for 3–4 minutes until softened, then stir in the garlic and cook for 30 seconds.
  4. In a large bowl, combine:
    • Uncooked rice
    • Chicken broth
    • Milk
    • Cream of chicken soup
    • Cooked chicken
    • Onion and garlic mixture
    • Thyme
    • Paprika
    • Salt and pepper
    • Peas and carrots (if using)
    • Half of the shredded cheese
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. Cover tightly with aluminum foil.
  7. Bake for 50–60 minutes, or until the rice is tender and most of the liquid has been absorbed.
  8. Remove the foil, sprinkle the remaining cheese over the top, and bake uncovered for 10–15 minutes, until the cheese is melted and bubbly.
  9. Let the casserole rest for 5–10 minutes before serving.
  10. Garnish with fresh parsley if desired.

Tips

  • Use rotisserie chicken for a quick meal.
  • Brown rice can be used, but it usually requires more liquid and a longer baking time.
  • Add sliced mushrooms, broccoli, or spinach for extra vegetables.
  • For a crunchy topping, sprinkle buttered breadcrumbs or crushed crackers over the cheese during the last 10 minutes of baking.

Storage

  • Refrigerator: Store in an airtight container for up to 4 days.
  • Freezer: Freeze for up to 3 months. Thaw overnight in the refrigerator before reheating.
  • Reheat: Warm in a 350°F (175°C) oven for 20–25 minutes, or microwave individual portions until heated through.

This casserole is creamy, comforting, and pairs well with a simple green salad or steamed vegetables.
