Ingredients

  • 1½ cups self-rising flour
  • ½ cup granulated zero-calorie sweetener (such as erythritol or monk fruit)
  • 1 tsp vanilla extract
  • 1 tsp cinnamon (optional)
  • 1 cup nonfat plain Greek yogurt
  • 2 large eggs
  • ¼ cup unsweetened applesauce
  • 1 cup fresh or frozen blueberries (do not thaw if frozen)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Line a 12-cup muffin tin with paper liners or spray with nonstick cooking spray.
  3. In a large bowl, whisk together the flour, sweetener, and cinnamon.
  4. In another bowl, whisk the Greek yogurt, eggs, vanilla, and applesauce until smooth.
  5. Add the wet ingredients to the dry ingredients and stir just until combined.
  6. Gently fold in the blueberries.
  7. Divide the batter evenly among the 12 muffin cups (about ¾ full).
  8. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let cool for 5 minutes in the pan, then transfer to a wire rack.
